Green Tea vs. Black Tea: What's the Difference?
When you stand in front of the tea shelf at the store, it can be overwhelming to choose from the many different types of tea. Two of the most popular varieties are green tea and black tea.
Let's get to the basics first; both types come from the same plant, Camellia sinensis, yet they have different production processes, flavors, and health benefits.
The production process
The biggest difference between green and black tea lies in how they are processed after harvesting. Both teas start out the same, but the path they take after picking is what gives them their distinctive characteristics.

Green tea : After picking, the leaves are quickly heated – either by steaming or roasting – to prevent the leaves from oxidizing. This preserves the green leaves and gives the tea its bright, fresh flavor. The process allows green tea to retain many of its natural antioxidants.

Black Tea: After picking, the leaves are rolled - this breaks down the cell walls and causes the leaf to oxidize. For black tea, they allow the leaves to fully oxidize. This oxidation gives the leaves a darker color and a richer, deeper flavor.

Caffeine content

Because both green tea and black tea can be produced from all parts of the bush, it is not really possible to say on a general basis which of the two types of tea has the most caffeine.
