Kombucha is a fermented beverage made from sweet tea and a culture of bacteria and yeast, known as a SCOBY (symbiotic culture of bacteria and yeast). This ancient beverage originates from East Asia and has long been prized for its unique flavors and supposed health benefits.
The process starts with brewing a sweet tea, which is usually black or green tea, but can also be flavored and mixed with other ingredients. This tea is then combined with a SCOBY and left to ferment for a period of one to three weeks. During fermentation, the SCOBY produces a wide range of acids and probiotic bacteria, transforming the tea into a fizzy, slightly acidic beverage.
Kombucha can be flavored with a variety of ingredients such as fruits, herbs, and spices after the initial fermentation, creating an endless array of flavor variations. From sweet, fruity versions to more complex, herbal-infused options, kombucha offers an exciting palette of flavors.
